Ingredients

  • 1 can of yumeat™ Plant-Based Luncheon, cut into 2cm cubes
  • ½ yellow onion, diced
  • 600g mashed potatoes
  • 400g cooked mixed vegetables, such as carrots, broccoli, capsicum, asparagus… anything you like, chopped up
  • 40g or 4 tablespoons unsalted butter
  • Black pepper
  • Salt to taste
  • Fried eggs and some side salad for serving (optional)

 

PREPARATION

  1. Melt the butter in a pan over medium heat. Add the onions and gently fry until soft and translucent.
  2. Add the plant-based luncheon. Cook until fragrant and slightly crispy.
  3. Stir in the mashed potatoes and cooked vegetables. Season with salt and black pepper.
  4. Occasionally press the mixture into the pan to brown (not to burn) and then turn to brown the other side.
  5. Serve with fried eggs and salad.
